How to select & store
Picking a ripe one
Look for taut, glossy, unwrinkled skin and a firm green stem. Heavier, thicker-walled fruit is fresher. Some varieties show pale corky striping when very hot; wrinkling and softness mean age, not intensity.
Storing it
About a week in the fridge in a paper bag — plastic traps moisture and rots them. Chillies dry, freeze and pickle exceptionally well, and freezing whole barely affects heat or flavour.

Are chilli seeds the hottest part?
No — this is the most persistent myth about chillies. Capsaicin is produced in the white pith, the placental membrane the seeds are attached to. The seeds themselves produce none; they simply sit against the hottest tissue and pick some up. If you want to reduce heat, scrape out the pale membrane and leave the seeds if you like. Removing seeds alone achieves very little.
What actually stops chilli burn?
Fat and dairy. Capsaicin is fat-soluble and essentially insoluble in water, so water and beer spread it around rather than removing it. Milk, yoghurt and lassi work on two counts: the fat dissolves the capsaicin, and casein protein helps lift it off the receptors. Bread, rice and oil help mechanically. There is a reason raita sits beside a hot curry.
Are chillies actually high in vitamin C?
Extraordinarily so by weight — around 243 mg per 100 g, higher than guava and roughly five times an orange. The catch is portion size: nobody eats 100 g of chilli. A single bird's-eye chilli weighs a couple of grams, so the practical contribution is small. It is a genuine nutritional fact and a misleading one if quoted without that context. Vitamin C was in fact first isolated from paprika peppers.
Why do chillies burn mammals but not birds?
Because that is what capsaicin is for. It binds to the TRPV1 receptor, which mammals have and birds effectively do not — so a bird feels nothing. Mammals chew and destroy seeds; birds swallow them whole and disperse them intact over long distances. The plant evolved a compound that punishes precisely the wrong seed carrier and ignores the right one.

The heat is targeted
Capsaicin binds to TRPV1, a receptor that responds to genuine heat — which is why chilli produces a burning sensation rather than a taste. It is not registered by your taste buds at all; it is a pain signal.
What makes it remarkable is how specific it is. Birds lack a capsaicin-sensitive form of that receptor and feel nothing at all. Mammals grind seeds to powder with their molars; birds swallow them whole and deposit them, viable, some distance away. The plant evolved a compound that punishes exactly the wrong disperser and is invisible to the right one.
Humans then domesticated it, bred it hotter, and built a Scoville scale to rank the results.
The pith, not the seeds
Almost everyone deseeds chillies to reduce heat, and almost everyone is aiming at the wrong tissue. Capsaicin is produced in the pale placental membrane that runs down the inside of the fruit. The seeds make none — they are simply pressed against the hottest part and pick up some by contact.
Scrape out the white pith and you remove most of the heat. Remove the seeds alone and you have mostly removed the crunch.
Milk, not water
Capsaicin is fat-soluble and barely interacts with water, so reaching for a glass of water mainly redistributes it around your mouth. Milk, yoghurt or a lassi work because the fat dissolves it and casein helps strip it off the receptors.
This is not folklore. It is why raita accompanies a hot curry, why Thai food arrives with coconut milk, and why a beer is one of the least effective things you could choose.
