Picking a ripe one
Plump, dry, uniformly colored berries with no juice-stained or moldy neighbors — one bad berry infects the clamshell overnight. Hollow is normal; a raspberry leaves its core on the plant.
Storing it
The most perishable common fruit — refrigerate immediately, unwashed, in a single layer if you can, and eat within a day or two. Freeze extras at once; they crumble thawed but shine in cooking.

Pick a raspberry and it comes away hollow — the white core stays on the plant. That’s the botanical signature of an aggregate fruit: each berry is really dozens of tiny drupelets, each with its own seed, clustered around a receptacle.
